Chicken Ricotta Meatballs with Spinach Alfredo Sauce

Ingredients

1 lb ground chicken

1 cup ricotta cheese

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 tsp salt

1/2 tsp black pepper

2 cups spinach

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 tsp nutmeg

1 tbsp olive oil

Directions

1. Preheat your oven to 375°F (190°C).

2. In a large bowl, gently mix together the ground chicken, ricotta cheese, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and black pepper until everything is just combined. Take care not to overmix.

3. Roll the mixture into meatballs and place them on a baking sheet.

4. Pop them into the oven and let them bake for 25-30 minutes, or until they’re cooked through and nicely golden.

5. While the meatballs are baking, grab a skillet and heat up the olive oil over medium heat. Toss in the spinach and cook until it’s just wilted.

6. Pour in the heavy cream, then stir in the nutmeg and Parmesan cheese. Cook the sauce until it thickens, stirring occasionally.

7. Once the meatballs are ready, add them to the skillet, gently tossing them in the creamy spinach Alfredo sauce until they’re well coated.

8. Serve your delightful creation hot, and enjoy the comforting flavors.
