Ingredients:

– 1 pound chicken breast, cut into bite-sized pieces

1/2 cup cornstarch

– 2 eggs, beaten

– 1/4 cup vegetable oil (for frying)

– 1 cup sweet and sour sauce

– 1 bell pepper, chopped

– 1 onion, chopped

– 1 cup pineapple chunks

Directions:

1. Preheat your oven to 375°F (190°C) to get it nice and warm.

2. Begin by giving those chicken pieces a good dredge in cornstarch, and make sure to shake off any excess.

3. Next, dip the cornstarch-dusted chicken into the beaten eggs for a nice coating.

4. Heat up that vegetable oil in a skillet over medium heat and fry the chicken until they’re beautifully golden brown.

5. Once fried, transfer the chicken to a baking dish and add in the sweet and sour sauce, along with the bell pepper, onion, and pineapple chunks.

6. Give everything a good toss to ensure even coating.

7. Pop the dish into your preheated oven and bake for 25-30 minutes, until everything is heated through.

8. Serve up this delightful dish hot over a bed of rice, and enjoy every bite!
