Shrimp Fried Rice

Ingredients:

– 2 cups cooked rice

– 1 cup shrimp, peeled and deveined

– 2 tablespoons soy sauce

– 1 tablespoon sesame oil

– 2 eggs, beaten

– 1 cup mixed vegetables (peas, carrots, corn)

– 2 green onions, chopped

– Salt and pepper to taste

Directions:

In a large skillet or wok, warm up the aromatic sesame oil over medium heat. Toss in the shrimp and let them sizzle until they turn a lovely pink, which should take about 2 to 3 minutes. Scoot them over to one side of your pan. Pour the beaten eggs into that empty space and give them a good scramble until they’re fully cooked. Now, it’s time to introduce the colorful mixed vegetables and the cooked rice to the party, mixing them together with the shrimp and eggs. Drizzle soy sauce over everything and give it a good stir so that all the flavors blend nicely. Don’t forget to season with some salt and pepper to taste. Just before serving, sprinkle the freshly chopped green onions on top. Enjoy every bite of this delightful dish!
