Mint Chocolate Delight Cupcakes

Ingredients:

– 1 cup all-purpose flour

1/2 teaspoon baking soda

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, softened

– 1/2 cup brown sugar, packed

– 1/4 cup granulated sugar

– 1 large egg

– 1 teaspoon vanilla extract

– 1/2 teaspoon mint extract

– 1/2 cup mini chocolate chips

– 1/2 cup mint chocolate chips

– 1 cup chocolate frosting

– Extra mint chocolate chips for topping

Directions:

1. Let’s start by preheating your oven to 350°F (175°C). Line your cupcake pan with some lovely cupcake liners.

2. Grab a medium bowl and whisk together the flour, baking soda, and salt. Just set this aside for now.

3. In a larger bowl, cream together the softened butter, brown sugar, and granulated sugar until it looks light and fluffy.

4. Next, add in the egg, vanilla extract, and mint extract. Mix it all up until everything’s well combined.

5. Now, gradually add your dry ingredients to the wet mixture. Mix it up just until it’s all combined.

6. Time to fold in those mini chocolate chips and mint chocolate chips. They’re what make this recipe extra special!

7. Go ahead and fill each cupcake liner about two-thirds full with your delightful cookie dough batter.

8. Pop those babies in the oven and bake for 12-15 minutes. You’ll know they’re done when a toothpick inserted in the center comes out clean.

9. Once they’re out of the oven, let them cool completely. Patience is key!

10. Finally, it’s frosting time. Once cool, spread some chocolate frosting on each cupcake and sprinkle with extra mint chocolate chips. Enjoy every bite!
