Ingredients:
– 1 cup milk
– 1 cup sweetened, flaked coconut
– 1 cup light cream
– 1/2 cup sugar
– 2 tablespoons corn starch
– 2 eggs, separated
– 1 teaspoon vanilla
Directions:
In a saucepan, mix together the milk, coconut, sugar, and corn starch. Place the pan over medium heat and keep stirring until it thickens. Separate the egg yolks from the whites and add the yolks to the mixture, giving it a good stir. Take the saucepan off the heat and blend in the vanilla. Pour the mixture into a pie crust and allow it to cool. Meanwhile, whip the egg whites until they form stiff peaks, then spread them over the cooled pie. If you’d like, toast some extra coconut to use as a topping. Finally, place the pie in the refrigerator to chill before serving.
