Taco Stuffed Sweet Potatoes

Ingredients:

– 2 large sweet potatoes

– 1 pound ground beef or turkey (or black beans for a vegetarian option)

– 1 packet taco seasoning

– 1 cup black beans, drained and rinsed

– 1 cup corn

– 1 cup diced tomatoes

– 1 cup shredded cheese

– Sour cream or Greek yogurt (for topping)

– Chopped cilantro (for garnish)

– Avocado slices (optional)

Directions:

1. Preheat your oven to 400°F (200°C).

2. Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake them for 45-60 minutes until they are tender.

3. While the sweet potatoes are baking, cook the ground beef or turkey in a skillet over medium heat until browned. Drain any excess fat and add the taco seasoning according to the package directions. If you’re opting for black beans instead, simply heat them in a separate pot.

4. Once the sweet potatoes are done, take them out of the oven and let them cool slightly. Cut them in half lengthwise, and scoop out a bit of the flesh to make room for the filling.

5. Fill each sweet potato with the meat (or beans), black beans, corn, diced tomatoes, and cheese.

6. Pop the stuffed sweet potatoes back in the oven for an additional 5-10 minutes until the cheese is nice and melted.

7. Before serving, add a dollop of sour cream or Greek yogurt, sprinkle some chopped cilantro on top, and add avocado slices if you like. Enjoy!
