Ingredients:
– 8 oz pasta (fettuccine or your choice)
– 1 cup sun-dried tomatoes, chopped
– 2 chicken breasts, diced
– 1 cup heavy cream
– 1 cup mozzarella cheese, shredded
– 2 cloves garlic, minced
– 2 tablespoons olive oil
– Salt and pepper to taste
– Fresh basil for garnish (optional)
Directions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat.
3. Add the garlic and sauté for about 1 minute.
4. Add the diced chicken and cook until browned and cooked through.
5. Stir in the sun-dried tomatoes and cook for another 2-3 minutes.
6. Pour in the heavy cream, and bring to a simmer.
7. Stir in the mozzarella cheese until melted and creamy.
8. Combine the cooked pasta with the sauce, and mix until well coated.
9. Season with salt and pepper to taste.
10. Serve warm and garnish with fresh basil if desired.
