– 1 cup of unsalted butter, softened
– 1 cup brown sugar, packed
– 2 large eggs
– 1 teaspoon vanilla extract
– 2 cups all-purpose flour
– 1 teaspoon baking soda

– 2 cups rolled oats
– 1 cup chocolate chips
– 1 cup chopped nuts (optional)
– 1 cup shredded coconut (optional)
Directions:
Start by preheating your oven to 350°F (175°C). In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is smooth. Add the eggs one at a time, incorporating each fully before adding the next. Stir in the vanilla extract. In another bowl, mix the flour, baking soda, and salt, then gradually add this dry mixture to the creamed ingredients until well combined. Fold in the oats, chocolate chips, and, if you like, the nuts and coconut. Place rounded tablespoonfuls of dough onto ungreased cookie sheets. Bake for 10 to 12 minutes, or until the cookies are lightly browned. Let them cool on the cookie sheets for a few minutes, then transfer the cookies to wire racks to cool completely.
