– 1 large onion, finely chopped
– 3 cloves garlic, minced
– 10 ounces mushrooms, sliced
– 10 ounces fresh spinach leaves
– 2 cups ricotta cheese
– Lasagna noodles
Directions:
Start by preheating your oven to 375 degrees Fahrenheit (190 degrees Celsius). In a large skillet, heat some olive oil over medium heat. Toss in the chopped onion and garlic, and sauté them until they’re nice and soft. Next, add the sliced mushrooms and cook until they brown up nicely. Once browned, stir in the fresh spinach and cook until it wilts down.
With your sauce and ricotta ready, it’s time to assemble the lasagna. In a lasagna dish, layer the ricotta cheese, followed by the mushroom and spinach mixture, and then a layer of lasagna noodles. Keep repeating these layers until you’ve used up all your ingredients, making sure to finish with a layer of noodles on top. Cover the dish with foil and pop it in the preheated oven for 25 minutes. Then, remove the foil and continue baking for another 15 minutes, or until the top is golden and bubbly. Once done, let the lasagna cool for a few minutes before slicing and serving. Enjoy!
