Creamy Spinach & Mushroom Lasagna

Ingredients:

2 tablespoons olive oil

1 large onion, finely chopped

3 cloves garlic, minced

10 ounces mushrooms, sliced

10 ounces fresh spinach leaves

2 cups ricotta cheese

Directions:

First, preheat your oven to 375°F (190°C). Next, grab a large skillet and warm up the olive oil over medium heat. Toss in the chopped onion and minced garlic, allowing them to sauté until they’re nice and translucent. Now, add the sliced mushrooms and let them cook until they are softened. Stir in the spinach and cook until it wilts down.

Once your mixture is ready, it’s time to layer. In a baking dish, start with a layer of lasagna noodles, followed by the mushroom and spinach mixture and a generous dollop of ricotta cheese. Continue layering until you’ve used up all your ingredients.

Pop it in the preheated oven and let it bake for about 25 to 30 minutes until it’s bubbling nicely. Once out of the oven, let it cool a bit before slicing it up and serving. Enjoy your delicious lasagna!
