Ingredients:

– 4 boneless, skinless chicken breasts

– 1 cup pineapple chunks (fresh or canned)

– 1 red bell pepper, sliced

– 1 yellow onion, sliced

– 2 tablespoons olive oil

– 2 tablespoons soy sauce

– 1 tablespoon honey

– 1 teaspoon garlic powder

– 1/2 teaspoon ground ginger

– Salt and pepper to taste

– Fresh cilantro for garnish

Directions:

Start by preheating your oven to 400°F (200°C). Get a baking sheet and line it with parchment paper, then place the chicken breasts on it. In a small bowl, combine the olive oil, soy sauce, honey, garlic powder, ginger, salt, and pepper to create a tasty marinade. Pour this mixture over the chicken breasts and make sure they’re all nicely coated. Arrange the pineapple chunks, red bell pepper, and onion slices around the chicken on the pan. Pop it in the oven and roast everything for about 20-25 minutes, or until the chicken is thoroughly cooked (it should reach an internal temperature of 165°F or 74°C). Once done, garnish with some fresh cilantro and enjoy your flavorful tropical meal!
