Ingredients:
– 2 boneless, skinless chicken breasts
– 1 cup grated Parmesan cheese
– 1/2 cup breadcrumbs
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 cup heavy cream
– 1/2 cup chicken broth
– 2 cups cooked penne pasta
– Salt and pepper to taste
– Fresh basil for garnish
Directions:
1. Start by preheating your oven to 400°F (200°C).
2. On a plate, mix together the grated Parmesan cheese and breadcrumbs. Coat your chicken breasts in this mixture, making sure they’re nicely covered.
3. Heat the olive oil in a skillet over medium-high heat. Once hot, add the coated chicken breasts. Cook them until they’re golden brown on each side, which should take about 4 minutes per side.
4. Once browned, transfer the chicken breasts to a baking dish. Place them in the preheated oven and bake for 15 to 20 minutes, or until they’re cooked through.
5. Using the same skillet, sauté the minced garlic for about a minute. Then, add the chicken broth and heavy cream. Allow this to simmer for roughly 5 minutes.
6. Take your cooked penne pasta and toss it in the creamy sauce. Season everything with salt and pepper to taste.
7. To serve, slice the Parmesan-crusted chicken and place it on top of the creamy pasta. Finish up by garnishing with fresh basil. Enjoy your meal!
