Directions:
Start by preheating your oven to 375 degrees Fahrenheit (190 degrees Celsius). In a skillet, warm up the olive oil over medium heat. Add the finely chopped onion and minced garlic, cooking them until they become soft and fragrant. Next, toss in the sliced mushrooms and cook them until they are browned. Stir in the fresh spinach leaves, allowing them to wilt down.
In a baking dish, begin layering by spreading some of the sautéed spinach and mushroom mixture, followed by a layer of lasagna noodles and a generous layer of ricotta cheese. Keep layering in this fashion until you finish with a final layer of sauce and cheese on top.
