Ingredients:
– 3 large bananas, mashed
– 1 1/2 cups whole milk
– 2 1/2 tablespoons lemon juice
– 1/2 tablespoon baking soda
– 1/2 teaspoon salt
– 2/3 cup butter, at room temperature
– 3 large eggs, at room temperature
– 1 cup granulated sugar
– 1/2 cup brown sugar
– 1 teaspoon vanilla extract
– 1/3 cup butter for the icing
– 8 ounces cream cheese
– 1 1/2 teaspoons lemon zest
– 1 teaspoon lemon juice for the icing
– 3 cups powdered sugar
Directions:
1. Preheat your oven to 350 degrees Fahrenheit.
2. Mash the bananas and mix them with 1 tablespoon of lemon juice. Set aside.
3. In a measuring cup, combine 1 1/2 tablespoons of lemon juice with 1 1/2 cups of milk. Set this mixture aside.
4. Using a stand mixer, cream together 2/3 cup of room temperature butter with 1 cup of granulated sugar and 1/2 cup of brown sugar until smooth.
5. Gradually add the eggs, one at a time, to the butter mixture.
6. Stir in 1 teaspoon of vanilla extract until the mixture is light and fluffy.
7. In a separate bowl, whisk together the flour, baking soda, and salt.
8. Alternately add the flour mixture and the milk mixture to the butter mixture, mixing just until everything is combined. Be careful not to overmix.
9. Fold in the mashed bananas.
10. Pour the batter into a greased 13×9-inch baking pan.
11. Bake for 60 minutes, or until a knife inserted into the center of the cake comes out clean.
12. Allow the cake to cool completely.
13. For the icing, beat together 1/3 cup of softened butter and 8 ounces of cream cheese until smooth.
14. Mix in 1 teaspoon of lemon juice and 1 1/2 teaspoons of lemon zest.
15. Gradually add 3 cups of powdered sugar, mixing until you reach the desired icing consistency.
16. Once the cake is cool, spread the icing over the top.
17. Optional: garnish with freshly sliced bananas. Serve and enjoy.
