Corn on the cob

– Mayonnaise

– Cotija cheese, crumbled

– Lime

– Chili powder

– Fresh cilantro

Directions

1. Fire up your grill and cook the corn until it’s lightly charred all over, turning often for even roasting.

2. While your corn is grilling, stir together mayonnaise, a generous handful of crumbled Cotija cheese, a good squeeze of lime juice, and a dash of chili powder in a small bowl.

3. When the corn is done, take it off the grill and immediately brush it all over with your creamy, cheesy mayo mixture.

4. Sprinkle extra Cotija cheese and some chopped cilantro on top for a burst of flavor and freshness.
