Stewed Meat with Flour Tortillas

Ingredients

2 lbs beef (chuck or round), cut into cubes

2 tablespoons vegetable oil

1 onion, chopped

2 cloves garlic, minced

1 bell pepper, chopped

1 can diced tomatoes (14.5 oz)

2 cups beef broth

1 teaspoon cumin

1 teaspoon oregano

Salt and pepper to taste

Flour tortillas for serving

Directions

1. Start by heating the vegetable oil in a large pot over medium-high heat. Add your beef cubes and let them brown nicely on all sides.

2. Once browned, take the beef out of the pot and set it aside for a moment.

3. In the same pot, toss in the onion, garlic, and bell pepper. Cook them until they’ve softened and the kitchen smells wonderful.

4. Return the beef to the pot and add the diced tomatoes, beef broth, cumin, oregano, and a good pinch of salt and pepper.

5. Bring everything to a boil. Then, lower the heat, cover the pot, and let it simmer gently for 1.5 to 2 hours, until the beef is very tender.

6. Serve this comforting stew hot, tucked into warm flour tortillas. Enjoy every bite!
