Ingredients
1 whole chicken (about 4-5 lbs)
2 teaspoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 lemon, cut into quarters
Fresh herbs like rosemary or thyme (optional, for stuffing)
Directions
1. Start by rubbing the entire chicken with olive oil, making sure it’s well coated. Sprinkle the garlic powder, onion powder, paprika, salt, black pepper, and dried thyme evenly over the whole chicken, massaging the seasonings in for lots of flavor.
2. Tuck the lemon quarters and any fresh herbs you like into the cavity of the chicken. This simple step adds wonderful aroma and taste.
3. Place your seasoned chicken breast-side up in the slow cooker and put the lid on.
4. Set the slow cooker to low and let the chicken cook undisturbed for 6-8 hours, or until the meat is beautifully tender and the internal temperature reaches 165°F.
