Fried Potatoes and Onions/Peppers with Smoked Sausage

Ingredients

2-3 medium potatoes, diced

1 onion, sliced

1 bell pepper, chopped

1 pound smoked sausage, sliced

2 tablespoons olive oil

Salt and pepper to taste

Optional: paprika, garlic powder

Directions

1. Heat the olive oil in a large skillet over medium heat.

2. Add the diced potatoes and let them cook, stirring now and then, for about 10 minutes until they start to soften up.

3. Toss in the sliced onion and chopped bell pepper. Keep cooking for another 5-7 minutes, until the veggies are nice and tender.

4. Mix in the sliced smoked sausage, and let everything cook together until the sausage is heated through, about 5-7 minutes.

5. Sprinkle with salt, pepper, and any of your favorite optional spices like paprika or garlic powder.

6. Serve hot and enjoy every bite!
