1 pound beef sirloin, cut into bite-sized pieces

2 tablespoons olive oil

1 onion, chopped

2 cloves garlic, minced

2 cups beef broth

1 cup sour cream

2 cups egg noodles

Salt and pepper to taste

Chopped parsley for garnish

Directions

1. Begin by cooking the egg noodles according to the package instructions. Once they’re perfectly tender, drain them and set aside to keep warm.

2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they’re soft and fragrant.

3. Turn the heat up to medium-high, then add the beef pieces to the skillet. Cook, stirring occasionally, until the beef is nicely browned on all sides.

4. Pour in the beef broth and bring everything to a gentle simmer. Let it cook for 10 to 15 minutes, just until the beef becomes tender and the flavors meld together.

5. Reduce the heat to low and stir in the sour cream, making sure it’s completely incorporated. Give it a taste and season with salt and pepper as you like.
