Ingredients:

Crust:

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • ¼ teaspoon salt

Filling:

  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 4 large eggs
  • 3 tablespoons unsalted butter, melted
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups chopped pecans

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or grease it lightly.
  2. Make the crust:
    In a medium bowl, mix flour, melted butter, sugar, and salt until crumbly but holds together when pressed.
  3. Press crust evenly into the bottom of the prepared pan. Bake for 10 minutes until lightly golden.
  4. Prepare filling:
    In a large bowl, whisk together corn syrup, brown sugar, eggs, melted butter, and vanilla until smooth. Stir in chopped pecans.
  5. Pour filling over the partially baked crust and spread evenly.
  6. Bake for 25–30 minutes, or until filling is set and slightly puffed.
  7. Cool completely in the pan before cutting into bars.

Tips:

  • For extra flavor, toast the pecans lightly before chopping.
  • Bars keep well covered at room temperature for up to 3 days or in the fridge for about a week.
  • Serve with whipped cream or vanilla ice cream for an extra treat.
