Ingredients:
Crust:
- 1 ½ cups chocolate cookie crumbs (e.g., Oreo, chocolate graham crackers)
- ¼ cup unsalted butter, melted
Cheesecake Filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 6 oz bittersweet or semisweet chocolate, melted and slightly cooled
- 3 oz white chocolate, melted and slightly cooled
- 3 oz milk chocolate, melted and slightly cooled
Sweet Surprise:
- ½ cup chocolate chips, caramel bits, or a swirl of fruit jam (choose your favorite surprise)
Instructions:

1. Prepare crust:
- Preheat oven to 325°F (160°C).
- Mix cookie crumbs with melted butter and press evenly into the bottom of a 9-inch springform pan.
- Bake crust for 10 minutes. Remove and cool slightly.
2. Make the filling:
- Beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Divide batter into three bowls.
3. Flavor each layer:
- Fold melted bittersweet chocolate into one bowl.
- Fold melted white chocolate into the second.
- Fold melted milk chocolate into the third.
4. Assemble cheesecake:
- Pour the bittersweet chocolate batter evenly over the crust.
- Add the sweet surprise (chocolate chips, caramel bits, or jam) evenly over this layer.
- Pour the milk chocolate batter on top.
- Finally, add the white chocolate batter as the top layer.
5. Bake:
- Bake for 55–60 minutes, or until the edges are set but the center still jiggles slightly.
- Turn off oven, leave cheesecake inside with door slightly open for 1 hour.
6. Chill:
- Remove from oven, cool completely, then refrigerate at least 4 hours or overnight.
Serving:
- Run a knife around the pan edges before releasing the springform.
- Slice generously to reveal the layers and surprise inside.
- Garnish with chocolate shavings, fresh berries, or whipped cream.

- Use good-quality chocolate for the best flavor.
- Avoid overbaking to keep a creamy texture.
- For an extra surprise, try adding a layer of peanut butter or fruit preserves instead of chips.
