Bake Time: 60 minutes
Chill Time: 4+ hours (preferably overnight)
Servings: 12 slices

Ingredients:

Crust:

  • 1 ½ cups chocolate cookie crumbs (e.g., Oreo, chocolate graham crackers)
  • ¼ cup unsalted butter, melted

Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 6 oz bittersweet or semisweet chocolate, melted and slightly cooled
  • 3 oz white chocolate, melted and slightly cooled
  • 3 oz milk chocolate, melted and slightly cooled

Sweet Surprise:

  • ½ cup chocolate chips, caramel bits, or a swirl of fruit jam (choose your favorite surprise)

Instructions:

1. Prepare crust:

  • Preheat oven to 325°F (160°C).
  • Mix cookie crumbs with melted butter and press evenly into the bottom of a 9-inch springform pan.
  • Bake crust for 10 minutes. Remove and cool slightly.

2. Make the filling:

  • Beat cream cheese and sugar until smooth and creamy.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Divide batter into three bowls.

3. Flavor each layer:

  • Fold melted bittersweet chocolate into one bowl.
  • Fold melted white chocolate into the second.
  • Fold melted milk chocolate into the third.

4. Assemble cheesecake:

  • Pour the bittersweet chocolate batter evenly over the crust.
  • Add the sweet surprise (chocolate chips, caramel bits, or jam) evenly over this layer.
  • Pour the milk chocolate batter on top.
  • Finally, add the white chocolate batter as the top layer.

5. Bake:

  • Bake for 55–60 minutes, or until the edges are set but the center still jiggles slightly.
  • Turn off oven, leave cheesecake inside with door slightly open for 1 hour.

6. Chill:

  • Remove from oven, cool completely, then refrigerate at least 4 hours or overnight.

Serving:

  • Run a knife around the pan edges before releasing the springform.
  • Slice generously to reveal the layers and surprise inside.
  • Garnish with chocolate shavings, fresh berries, or whipped cream.

Tips:

  • Use good-quality chocolate for the best flavor.
  • Avoid overbaking to keep a creamy texture.
  • For an extra surprise, try adding a layer of peanut butter or fruit preserves instead of chips.
