  • 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
  • 3 cups broccoli florets
  • 2 tbsp vegetable oil, divided
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp oyster sauce (optional for depth)
  • 1 tbsp cornstarch
  • ¾ cup chicken broth or water
  • 1 tsp sesame oil
  • Cooked rice, for serving
  • Sesame seeds or sliced green onions for garnish (optional)

Instructions

  1. Make the sauce: In a small bowl, whisk together soy sauce, oyster sauce, chicken broth, cornstarch, and sesame oil. Set aside.
  2. Cook chicken: Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add sliced chicken and stir-fry until no longer pink and slightly browned, about 4–5 minutes. Remove and set aside.
  3. Cook broccoli: Add the remaining oil and sauté broccoli for 2–3 minutes. Add 2–3 tbsp water, cover, and steam for 2 more minutes until crisp-tender.
  4. Combine: Return chicken to the pan. Add garlic and ginger, stir-fry for 1 minute until fragrant.
  5. Add sauce and toss everything to coat. Cook 2–3 more minutes until sauce thickens and everything is well glazed.
  6. Serve hot over rice, garnished with sesame seeds or green onions if desired.

Tips:

  • Slice chicken thinly for quicker cooking.
  • Add bell peppers, snap peas, or carrots for extra color and flavor.
  • Make it spicy with chili flakes or a dash of sriracha.
