  • 1 cup whipped topping (like Cool Whip), plus more for topping

  1. Make the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch pie dish. Chill in the fridge while you prepare the filling.
  2. Prepare the filling: In a large bowl, beat cream cheese until smooth. Add condensed milk, lemon juice, and vanilla extract, and beat until well combined.
  3. Fold in the crushed pineapple, shredded coconut, and whipped topping until smooth and fluffy.
  4. Pour filling into the chilled crust and smooth the top.
  5. Chill for at least 4 hours or overnight until set.
  6. Top with extra whipped topping, toasted coconut, pineapple chunks, or cherries before serving.
