Step 1: Make the Brownie Base
- Preheat oven to 350°F (175°C). Line an 8-inch springform pan with parchment paper.
- Melt butter and dark chocolate together. Stir in sugar, then eggs one at a time.
- Add flour, salt, and vanilla. Pour into pan and bake 18–20 minutes. Let cool completely in the pan.
Step 2: Milk Chocolate Mousse
- Heat 1/4 cup cream until just steaming, then pour over milk chocolate. Let sit 1 minute, then stir until smooth.
- Let cool slightly, then fold in whipped cream. Spread over cooled brownie base. Chill for 30 minutes.
Step 3: White Chocolate Mousse
- Repeat same steps with white chocolate and cream.
- Spread over milk chocolate layer. Chill for at least 4 hours or until fully set.
Step 4: Ganache Topping (Optional)
- Heat cream and pour over dark chocolate. Let sit 1 minute, then stir until smooth.
- Pour over the chilled cake and gently spread. Chill for 15–20 minutes until ganache is set.
