Mandarin Orange Pineapple Cake is a light, fruity, and moist dessert bursting with citrus flavor. Made with simple ingredients and topped with a fluffy pineapple whipped frosting, this cake is perfect for spring, summer, or any festive gathering.


Ingredients

For the Cake:

  • 1 box yellow cake mix (15.25 oz)
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 can (11 oz) mandarin oranges (with juice)

For the Frosting:

  • 1 container (8 oz) whipped topping (Cool Whip)
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 can (20 oz) crushed pineapple (with juice)

Instructions

Step 1: Make the Cake

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, mix cake mix, eggs, oil, and the entire can of mandarin oranges (including juice).
  3. Beat on medium speed for 2–3 minutes until light and fluffy—the oranges will break up into the batter.
  4. Pour into the prepared pan and bake for 30–35 minutes or until a toothpick inserted comes out clean.
  5. Let the cake cool completely.

Step 2: Make the Frosting

  1. In a bowl, mix the dry pudding mix with the crushed pineapple and its juice until thickened (1–2 minutes).
  2. Fold in the whipped topping until smooth and fully combined.
  3. Spread the frosting evenly over the cooled cake.

Chill & Serve

Refrigerate the cake for at least 1 hour before serving for the best texture and flavor.
