For the Stir-Fry:
- 8 oz chow mein noodles (or thin egg noodles)
- 1 lb boneless chicken breast or thighs, thinly sliced
- 2 tbsp vegetable oil
- 1 cup shredded cabbage
- 1/2 cup julienned carrots
- 1/2 cup bean sprouts (optional)
- 1/4 cup sliced green onions
- 2 garlic cloves, minced
For the Sauce:
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- 2 tbsp water or chicken broth

- Cook noodles: Boil noodles according to package instructions. Drain, rinse with cold water, and set aside.
- Prepare sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin, sesame oil, sugar, and water.
- Stir-fry chicken: Heat 1 tbsp oil in a large pan or wok over medium-high heat. Add chicken and cook until browned and fully cooked, about 5–7 minutes. Remove from pan.
- Cook vegetables: Add remaining oil to the pan. Stir-fry garlic, cabbage, carrots, and bean sprouts for 2–3 minutes until just tender.
- Combine: Return chicken to the pan. Add noodles and sauce. Toss everything together for 2–3 minutes until well coated and heated through.
- Finish: Stir in green onions and serve hot.
