Ingredients

  • 2 lbs baby potatoes (halved or quartered)
  • 14 oz smoked sausage or kielbasa, sliced
  • 1 small onion, diced
  • 1 ½ cups shredded cheddar cheese
  • 1 (1 oz) packet ranch seasoning mix
  • ½ cup sour cream
  • ½ cup mayonnaise or cream cheese (softened)
  • 2 tbsp butter, cubed
  • ¼ tsp black pepper
  • ¼ cup milk (optional, for creamier texture)
  • Chopped parsley or green onions for garnish

Instructions

Step 1: Prep the ingredients

  1. Wash and cut the potatoes into bite-size chunks.
  2. Slice the sausage into ¼-inch rounds.
  3. Dice the onion.

Step 2: Layer in the crockpot

  1. Spray the inside of a slow cooker with nonstick cooking spray.
  2. Layer in half of the potatoes, half of the sausage, and half of the onions.
  3. Sprinkle with half of the ranch seasoning, some black pepper, and a handful of cheese.
  4. Repeat layers with the remaining potatoes, sausage, onions, and ranch mix. Dot with butter cubes.

Step 3: Mix creamy topping

  1. In a small bowl, mix together sour cream and mayo (or cream cheese).
  2. Spread the mixture over the top layer, or spoon it in dollops for better coverage as it cooks.

Step 4: Cook

  1. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
  2. In the last 15–30 minutes, sprinkle the remaining cheese over the top. Let melt before serving.
  3. If desired, stir in milk to loosen up the texture.

Step 5: Garnish and serve

Top with chopped parsley or green onions and serve warm as a complete meal or with a side salad or crusty bread.

Tips

  • Use red or gold potatoes for the best texture—they hold up well in the slow cooker.
  • Turkey sausage works well if you want a lighter option.
  • Add bell peppers or mushrooms for extra vegetables.
  • For spice, toss in red pepper flakes or use pepper jack cheese.
