Choco-Melt Delight is a rich, molten-style dessert that combines the deep intensity of dark chocolate with a soft, gooey center. Ingredients

For the cakes:

  • ½ cup (1 stick) unsalted butter
  • 4 oz dark chocolate (60–70% cocoa), chopped
  • 2 large eggs
  • 2 large egg yolks
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp all-purpose flour

Instructions

Step 1: Prepare the ramekins

  1. Preheat the oven to 425°F (220°C).
  2. Grease 4 ramekins (6 oz size) with butter and lightly dust with cocoa powder.

Step 2: Make the chocolate mixture

  1. In a heatproof bowl, melt the butter and chocolate together over a pot of simmering water, stirring until smooth.
  2. Remove from heat and cool slightly.

Step 3: Whisk eggs and sugar

  1. In a separate bowl, beat the eggs, egg yolks, sugar, vanilla, and salt until light and thickened (about 3–4 minutes).
  2. Slowly fold in the melted chocolate mixture.
  3. Gently fold in the flour until just combined.

Step 4: Bake

  1. Divide the batter evenly among the ramekins.
  2. Place ramekins on a baking sheet and bake for 12–14 minutes, until the edges are firm but the center is still slightly soft.
  3. Let cool for 1 minute, then carefully run a knife around the edges and invert onto serving plates.

Step 5: Serve warm

Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream, fresh berries, or a drizzle of chocolate sauce.


Tips

  • Do not overbake or the center will set fully and lose the gooey texture.
  • You can prepare the batter ahead and refrigerate the ramekins. Bring them to room temperature before baking.
  • Try adding a splash of espresso or orange zest to the batter for a flavor twist.
