Ingredients:

  • 1 cup fresh spinach, chopped (or thawed frozen spinach, drained)
  • 1 cup canned artichoke hearts, drained and chopped
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced

Instructions:

1. Prepare the spinach and artichokes

If using fresh spinach, sauté it lightly in olive oil until wilted, then chop finely. If using frozen, make sure it’s fully thawed and squeezed dry.

2. Make the cheesy filling

In a mixing bowl, combine the cream cheese, sour cream, Parmesan, mozzarella, garlic, salt, and pepper. Stir in the chopped spinach and artichokes until well mixed.

3. Toast the bread slices

Preheat your oven to 375°F (190°C). Arrange the bread slices on a baking sheet and brush lightly with olive oil. Toast in the oven for 5–7 minutes until just starting to brown.

4. Add the filling and bake

Spread a generous amount of the spinach-artichoke cheese mixture onto each toasted bread slice. Return the baking sheet to the oven and bake for another 10–12 minutes, or until the cheese is melted and bubbly and the toasts are golden around the edges.

5. Serve
