Instructions:

- Boil the potatoes: Wash and cut potatoes into fry-shaped strips (about ½ inch thick). Boil in salted water for 8-10 minutes until just tender but still firm. Drain well and pat dry with paper towels.
- Season: Toss the boiled potato strips with oil, salt, pepper, and any other seasonings you like.
- Bake: Preheat oven to 425°F (220°C). Spread potatoes on a baking sheet in a single layer. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- Add cheese: Remove from oven and immediately sprinkle cheese over the hot fries. Return to oven for 2-3 minutes until cheese melts.
- Serve: Garnish with chives or other toppings if desired. Serve immediately while hot and crispy.
