
Ingredients
1 cup water
1 cup all-purpose flour
1/4 teaspoon salt
4 large eggs
1 cup heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
Directions

1. Preheat your oven to 400°F (200°C) and grease a couple of baking sheets.
2. In a medium saucepan, bring the water and butter to a rolling boil over medium heat.
3. Add the flour and salt all at once, and stir quickly until the mixture pulls away from the sides of the pan and forms a ball.
4. Take the pan off the heat and let it cool for a few minutes so you don’t scramble the eggs.
5. Add the eggs one at a time, beating well after each addition. You want the dough to be smooth and glossy by the end.
6. Drop the dough by the tablespoon onto your prepared baking sheets, leaving room for them to puff up.
7. Pop them in the oven and bake for 25 to 30 minutes, or until your puffs are beautifully golden and feel crisp.
8. Let the puffs cool on a wire rack. While they’re cooling, whip the heavy cream with the powdered sugar and vanilla until you get lovely stiff peaks.
9. Once your cream puffs are cool, carefully slice each one in half and fill them generously with whipped cream.
10. Give them a light dusting of powdered sugar if you like, and get ready to enjoy something truly special!
