Ingredients
For the fish:
4 fish fillets (e.g., cod, sea bream, or tilapia)
4 tbsp extra virgin olive oil
2 garlic cloves, finely chopped
Juice of 1 lemon
Zest of 1 lemon
1 tbsp fresh oregano leaves (or 1/2 tsp dried oregano)
1 tbsp fresh parsley, chopped
1 tsp red pepper flakes (optional)
Salt and pepper to taste
For garnish:
A few fresh basil leaves
A drizzle of olive oil
Instructions

1. Prepare the marinade:
In a bowl, mix together:
Olive oil
Lemon juice
Lemon zest
Garlic
Oregano
Parsley
Red pepper flakes (if using)
Salt and pepper
2. Marinate the fish:
Place the fillets in a shallow dish and pour the marinade over them.
Turn to coat well.
Cover and refrigerate for 30 minutes.
3. Cook the fish:
Heat a non-stick pan with a small amount of olive oil over medium heat.
Lightly drain the fillets (reserve the marinade) and place them in the pan, skin side down if applicable.
Cook for 3–4 minutes until golden.
Flip gently and reduce the heat. Cook for another 2–3 minutes.
Add the reserved marinade to the pan to simmer slightly and infuse flavor.
4. Assemble the dish:
Transfer the fish to serving plates.
Spoon over the warm pan juices.
Garnish with fresh basil leaves and a drizzle of olive oil.
5. Serve:
Pair with:
Aromatic rice
Grilled vegetables
Or a crisp green salad
Tip: This dish is also great served cold as part of a summer salad plate. Just chill the cooked fish and flake over greens with olives and cherry tomatoes.
